Food Safety Matters When Enjoying Holiday Leftovers

For many families, enjoying leftovers after a big Christmas meal is almost as much of a tradition as the feast itself. While reheated ham, turkey, and casseroles can make the days after the holiday easier and more delicious, food safety should stay top of mind to avoid illness.

Food safety experts with the U.S. Department of Agriculture stress that leftovers should be put away as soon as possible after the meal ends. Large dishes, such as casseroles or trays of stuffing, can hold heat longer and should be divided into smaller portions so they cool quickly in the refrigerator.

The same applies to meats. Large cuts of turkey, ham, or roast should be sliced into smaller pieces before being stored. This helps the food cool evenly and keeps it out of the temperature “danger zone” where bacteria can grow.

According to USDA guidance, leftovers can safely be kept in the refrigerator for three to four days. If you don’t plan to eat them within that timeframe, freezing is a better option. Frozen leftovers are generally safe for three to four months, as long as they are stored properly.

When reheating leftovers, make sure food is heated thoroughly and served hot. Taking a few extra steps with storage and reheating can help ensure holiday leftovers remain safe—and enjoyable—long after the celebration ends.
